I'm trying to make some healthier foods for my family (and me) and being a loser in the kitchen makes this challenging.  If you follow me on Instagram, you've probably seen the pictures of fire and burned food.  ;)  I found something though that tastes good, is super easy and I can nibble on this at any time and not have the guilt of eating an entire bag.

Zucchini Chips made with a dehydrator - it might sound disgusting but trust me, they aren't!

Ingredients:

  • 3 Zucchini's
  • 1 bottle of olive oil with some flavoring.  I used the Italian Seasoning flavor for dipping in bread that was premade.  You can also make your own with this recipe.

Directions:

Slice up the zucchini.  I then brushed the olive oil mixture onto the zucchini slices.  I took each slice and put them out on a tray for our dehydrator and started it on the "vegetable" setting.  Leave it there for about 24 hours and then...eat!

I know you can do this in your oven as well but I burned that batch so I'm sticking with the dehydrator.  :)  If you've got tips on how to dehydrate food in the oven, I'd love to see those in the comments!
