St. Pauls’ popular breakfast restaurant, Hope Breakfast Bar, has announced it is planning on expanding with a new location in Eagan MN.

Hope Breakfast Bar is also located in St. Louis Park's West End, but following a remodel of space at 1012 Diffley Road, Eagan (near Dunn Bros. Coffee), they are hoping to get things started soon.

Bring Me The News has an article about the possible expansion and shares what Chef Brian Ingram, of Purpose Restaurants, had to say. "Hope is really set up to be embedded in the communities," Ingram told the Eagan Planning Commission last week, highlighting the work of the restaurant group's nonprofit entity, Give Hope MN.”

Hope Breakfast Bar is popular for a reason! Their menu includes some very delicious items such as German Chocolate Pancakes (fresh German chocolate pancakes with toasted coconut, German chocolate syrup), Banana Churro Waffle (sweet waffle with fresh banana, walnuts, cinnamon brown sugar with cream cheese syrup), and Pillow Pancakes (buttermilk and sourdough yeast pancakes light as air, cinnamon sugar butter, and cream cheese maple syrup). And these are just a few to name but there are so many other tasty things to try!

Don’t worry, Hope breakfast Bar also has lunch fare, specialty coffee drinks, and cocktails. So there is something for everybody!
