New life is being breathed into a former Fiddlehead Coffee location in Rochester, Minnesota. This new-to-Rochester business is expanding from St. Paul.

I still can't believe Fiddlehead closed last summer. I also can't believe it was already so long ago that they closed. Fiddlehead was one of my husband and my's favorite spots so it was very sad to hear the owners needed to close all of the locations.

IN CASE YOU MISSED IT: Fiddlehead Announces Closure

The three Fiddlehead locations in Rochester have been sitting empty ever since as far as I know. The location below Flats on 4th closed before the big announcement last summer but I believe that one is still empty as well.

But now, the Fiddlehead location by Fresh Thyme is going to have something new!

Twin Cities Bakery Expanding into Rochester, MN

The bakery that's coming to town is called Don Panchos Bakery, a Mexican bakery out of St. Paul. Now, they have decided to make the big move to expand further south into Rochester.

They sell delicious, Mexican baked goods like churros, conchas, and flan. They also do cakes that look delicious! And online they get good reviews, with over 4.5 stars on both Google and Yelp.

The owner of Don Panchos, Estevan Perez, told the Post Bulletin, "'Don Panchos Bakery is a product of four generations of bakers from Morelos, Mexico.'" So they know what they're doing! The plan is to open up their Rochester location "'towards the end of January'".
